What We’re Building: Jen’s Week In Review
Hello Friends! I hope this continues to find you well. We have survived another week and that is GOOD! I’m officially counting down until the end of (home)school and the start of summer camp. To help me mentally, I’ve created a countdown chain. There is something satisfying about ripping off a link in the chain each week. We can do this!
The wine doesn’t hurt either – HA!

New Recipe!
Looking for a quick lunch or snack? I’m loving this easy chickpea salad I first discovered while eating out (remember when we used to do that?) for brunch. It was so delicious paired with smoked salmon (my favorite!).
I knew I wanted to recreate this dish at home and it was really easy!
Here’s the recipe…
- Can of chickpeas (drained and rinsed)
- Bunch of scallions (diced, white & light green parts)
- Chopped red onion (about a 1/4 cup)
- 2 T of chopped capers
- Feta Cheese (crumbled, about a 1/2 cup)
- Squeeze of lime (I used 1/2 a lime)
- Drizzle of extra virgin olive oil
Combine ingredients, season with salt & pepper, and serve with smoked salmon on the side. Enjoy!

Easter Wishes!
I know Easter weekend will feel a lot different this year, but we can still celebrate. If you are looking for an online service for Easter worship, our wonderful church has been fully online since this all started. They have 2 services each Sunday – 9:45 is the contemporary (think band style music) and 11:15 is the traditional (choir/orchestra). Our Senior Pastor is a great teacher with messages filled with HOPE (both services have the same message)!
You can access the services though the livestream link or the Facebook live link (if one doesn’t work, we’ve tried the other and been successful).
